Growing up my dad was in the restaurant
business and later in the bakery, so I love both cooking and baking, both
my parents are great cooks and bakers, they have truly inspired me.
A little over a year ago I decided to try making sandwich
bread for my family and in doing so I have tried a number or recipes in hopes
of achieving the degree of softness that store bought sandwich bread has...I
began to think this was not achievable at home.
After continuous search, a few
times people referred to The Bread Bible so I decided to purchase a copy. I was
surprised that there was more than one Bread Book under that name so after a
little reading about each of the ones that I found. I decided to go with The
Bread Bible by Rose Levy Beranbaum. Once it came, I could not wait to page the
book, I hoped that there would be a sandwich bread recipe…it was after called
The Bread Bible and there is.
The first time I made it just as the recipe call for and it
was so cool! I seriously felt like I was a scientist, to experience the
consequence of following her technique, and seeing and feeling the dough behave
different than all the other times that I have made bread was just awesome! I
am actually bread rising at this very moment.
Because I wanted to make might bread a little sweeter add a
little bit of whole wheat. I tweaked the Basic Soft White Sandwich Loaf just a
little bit.
I substituted 1 cup of unbleached all-purpose flour for 1
cup of whole wheat flour when making the dough starter (sponge). Cut down the salt to 1 ½ teaspoons and lastly
I up the honey to 1/3 of a cup.
I was really intrigued by Rose's technique but really enjoyed following her instructions and ending up with the best sandwich bread I have made. It’s soft, moist, delicious and it does not break when you fold it.
I just thought tthat I would share : ) Maybe you enjoy making bread too or maybe you know someone who enjoys making bread and might enjoy having this book in their collection.
Rose Levy Beranbaum also published The Baking Bible which is all about cakes! Yes, I totally plan to get me a copy of that one too. I love how she explains why to use one ingridient over other other, like powder milk over regular milk.
